Ingredients

200 gms all purpose flour
1 tsp mixed herbs
1/2 tsp salt
2 tbsp vegetable oil
1 tsp sugar
1 tsp yeast
180 ml water more or less depending on the flour quantity
filling for zingy parcel
150 gms cottage cheese
125 gms capsicum
80 gms onion
110 gms tomatoes
2 tbsp vegetable oil
1 tsp minced garlic cloves
1 tsp mixed herbs
to taste salt
50 gms cheese more or less
to spread on top
to sprinkle mixed herbs
to spread on top butter

The best zingy parcel with stuffed cottage cheese filling. The flavor and texture is amazing. These cheesy and soft parcels are perfect for dinner or serve them as an appetizer at a party.

THE INGREDIENTS

White flour-All purpose flour.

Yeast– I like to use instant dry yeast and always activate yeast for better results.

Sugar-Sugar help to activate the yeast.

Salt- To add in the parcels dough and for cottage cheese stuffing.

Oil-Oil to mix into the dough.

Garlic cloves- To add in the cottage cheese filling.

Mixed herbs– To add in the flour or in the cottage cheese filling , it enhances the flavors.

Cottage cheese-The main ingredients of the zingy parcels.

Capsicum- To add in the parcels filling.

Onion- To make the parcels filling.

Tomatoes- To add tangy flavor to the parcels.

Cheese-Helps in adding the cheesy flavor to the parcels.

Butter- To spread on top of the parcels.

HOW TO MAKE THE PARCEL

This recipe has 4 simple steps which include preparing the dough, prepare the parcels filling, shaping the parcels and baking.

First we will prepare the dough, take warm water in a bowl add in sugar and yeast. Let it sits for some time or until foamy. Add flour, salt, mixed herbs in large mixing bowl. Now add prepared yeast into flour and combine dough. Once the dough is combined, transfer the dough to the counter top add in oil and knead for another 15 minutes or until soft and smooth dough. Once the dough is ready place it in a bowl and keeps aside for an hour or until dough is doubled in size.

Second we will prepare the cheese cottage filling. In pan heat 2 tbsp oil. Once the oil is hot add onion, garlic and saute until it turns brown. Add capsicum, tomatoes and saute for 2 minutes. Add mixed herbs, salt according to taste and mix well. Lastly, add cottage cheese (paneer) and mix well. Tada filling is ready.

Third we shape the parcels, take the dough out on lightly floured surface and knead it for a minute. Now roll the dough into circle shape(roti) and cut them into 6 equal triangular pieces. Place the cottage cheese filling and little amount of cheese in the middle of each slice. Now join three corner use water to seal them. Place the parcels in a baking tray and let it rest for 10-15 minutes.

Fourth step is to bake the parcels. Preheat your oven and bake for 25 minutes or until light brown on top. Don’t forget to brush the parcels with melted butter before baking and sprinkle them with mixed herbs.

PREPARE THE DOUGH

In a bowl, add in 180 ml warm water, 1 tsp sugar, 1 tsp yeast and stir. Let it rest until frothy.
