2 ripe banana
1/2 cup jaggery powder
1/2 cup milk
1 tbsp vinegar
1/4 cup oil
1 tsp vanilla extract
1 cup whole wheat flour
1/2 tsp cinnamon powder
1 tsp baking powder
1/2 tsp baking Soda
1/4 tsp salt
to top banana slices

These amazingly delicious muffins are made of the whole wheat flour and with no refined sugar. The healthiest and best muffins ever. The rich flavor of banana and cinnamon make them super delicious. Banana and cinnamon always go well together.

Ripe or Overripe Banana

Ripe banana are great for baking, they give best flavor. Overripe bananas can also be used. The banana gives a moist taste and texture to the muffins. To ripen bananas, place them on a baking tray lined with baking paper and place them in the oven at 220° C for 15 minutes.

Cinnamon

Cinnamon make muffins incredibly aromatic. The flavor of cinnamon make muffins more flavorsome and your kitchen will fill with the sweet smell of these cinnamon muffins.

No Refined Sugar

Used jaggery powder for these muffins. So no refined sugar is used. By replacing sugar by jaggery make them little healthier. Yours kids will definitely going to love them.

Preheat oven to 170° C for 20 minutes and line a muffin tray with paper liner.

In a bowl add milk, vinegar and set aside for 10 minutes.

In a large mixing bowl, add mashed banana, oil, jaggery powder and mix well until jaggery powder dissolves.

Add in milk mixture and whisk to combine.

Sift all dry ingredients together i.e flour, baking powder, baking soda, cinnamon powder and salt.

Add dry ingredients to the wet ingredients.

Fold to combine. Do not over mix.

Scoop the batter in your lined muffin tray.

Top each muffin with the banana slice and tap the tray gently.

Bake the muffins for 20 minutes or until the skewer inserted in center comes out clean.
