Ingredients

1 cup whole wheat flour
1/2 cup oats
3 ripe banana
1/4 cup oil
1/2 cup coconut sugar
2 tbsp cocoa powder
1 tsp vanilla extract
1/2 tsp cinnamon powder
1 tsp lemon Juice
1 tsp baking powder
1/2 tsp baking Soda
1/4 tsp salt
2 tbsp ground flax seeds
6 tbsp water

Preheat the oven to 180 °C for 20 minutes. Line a loaf pan with parchment paper.

In a bowl, combine ground flax seeds and water. Mix together, and let sit for 15 minutes to thicken.

In a large bowl, use a fork and mash the banana.

Whisk in the oil, sugar, vanilla extract, lemon juice and prepared flax meal. Stir to
combine.

Fold in the flour, cocoa powder, baking powder, baking soda, oats, cinnamon powder and salt into the wet ingredients.

Use spatula and mix until everything comes together.

The batter will be thick, add 3-4 tbsp of water.

Transfer the batter into the prepared loaf pan and halve the banana, place it on top of the batter and press slightly.

Bake at 180°C for 35-40 minutes or until skewer inserted into the centre comes out clean.
