1/2 Cup curd
1/2 Cup milk
1 Tsp vanilla extract
1/4 Cup evaporated milk Milk Mixture
1/4 Cup heavy cream Milk Mixture
1/4 Cup condensed milk Milk Mixture

Its a eggless version of tres leches cake.

A tres leches cake is a sponge cake soaked in three kinds of milk i.e evaporated milk, condensed milk, and heavy cream then topped off with whipped cream . Tres leches means “3 milks” in Spanish. Tres Leches, it is an Mexican cake. The recipe is super easy and contains high calories, this is yum and delicious.

I have used butter and curd in this recipe to make a super soft and light sponge cake. So that, butter cake is able to hold up while absorbing the three kinds of milk. You can replace butter and curd by eggs in this recipe. Use room temperature butter. If you are using unsalted butter then add in salt a pinch.

The ingredients measurement should be accurate. Sifting is very important in this recipe. Sift all the dry ingredients. Do not over mix the cake batter. Do not over bake the cake. Once baked, let cake cool completely.

Use normal milk if you don’t have evaporated milk. Cake can be stored in the refrigerator for up to 3 days.

Preheat the oven at 180 degree temperature for 15 minutes.

Grease the baking pan and keep aside.

In a large bowl pour in butter and sugar and whisk until fluffy.

Add in curd, milk, vanilla extract and whisk.

Sift the all-purpose flour, baking powder, baking soda.

Add the sifted flour mixture to the wet mixture and fold in well.

Pour the batter into a baking pan and bake for 30 to 40 minutes.

Once baked, let the cake cool completely.

Combine the evaporated milk, heavy cream, condensed milk in a bowl.

Using a skewer or fork, poke holes all over the cake.

Slowly pour the milk mixture all over the cake and refrigerate for 1 hour or overnight.

Frost the cake with the whipped cream.

Serve with fresh scooped mangoes, if desired.
