While mango season is here, treat yourself with an appetizing and creamy pudding. This delicious mango sago pudding is very simple to make, and just required four main ingredients. Such a yummy dessert, your family will love this pudding.
This mango sago pudding is sweet, delicious and one of the easiest desserts filled with rich mango flavor.
Mango Sago Pudding?
Actually it’s a Mango pomelo sago, type of Hong Kong Dessert. This dessert can be found in the menu of many Chinese restaurants. Pomelo is the citrus fruit similar in taste to a grapefruit. There are some variations in my recipe. The actual process of making this dessert is, first boil the sago while blending mango, coconut milk in the blender. When the sago turns transparent, rinse it. Then, pour the mango, coconut milk mixture into a bowl with the cooked sago and mix. Lastly, garnish with pomelo on top.
Ingredients needed:
This thick and creamy pudding is consist of very few ingredients and easy to make. I have used tapioca pearls/sabudana for making this pudding.
Milk: Coconut milk can be used. Sago thickens as it sits, so you may need to adjust the milk.
Sago: For pudding i have used sabudana, you can use sago pearls if you have them.
Sugar: Adjust sugar as per your taste.
Vanilla extract: It’s totally optional, you can skip it. In the place of the vanilla extract, you could use cardamom powder.
Mango: Use half mangoes for puree and half to top.
Notes:
For more serving, the recipe can be scaled up.
Store in the refrigerator and top the pudding with mango right before serving.
You will prepare as many as layers while assembling in a container.
For making pudding more beautiful use a see through glass container.

Rinse tapioca pearls under cold water until clear water appears. |

In a bowl, soak the tapioca pearls for an hours. |

In a heavy bottom pan, bring about 4 cups of water to boil. |

Add the soaked tapioca pearls to the boiling water and stir. |

Cook the tapioca pearls on medium flame for 10 minutes or until tapioca pearls turn translucent. Keep stirring. |

Once done, strain the cooked tapioca pearls with a sieve and rinse them under cold water to remove the starch. |

In a blender, add 1/2 chopped mangoes and blend until smooth consistency. |

Transfer cooked tapioca pearls to the pan along with 2 cups of milk and 1/4 cup of sugar. |

Cook for another 10 minutes or until tapioca pearls starts to thicken and creamy. |

Remove from heat, let the tapioca pearls cool completely. |

Once cool completely, add vanilla extract, mango pulp and stir vigorously. |

Refrigerate until ready to serve. |
