So ultimately tried my hand on these trending coffee bean cookies. These are decadent and just perfect for coffee lovers. While gobbling these cookies, they amazingly blast rich coffee flavor in every bite. These cookies are crunchy on the outside and soft on the inside.

INGREDIENTS
Butter- I always use salted butter to make cookies. Do not use cold butter. Use room temperature butter and not melted.
Powdered sugar- You can also use icing sugar.
All purpose flour- Always sift all purpose flour/maida before using.
Corn flour- Corn flour is used as a binding agent. You can skip corn flour if you are using icing sugar.
Coffee powder- Main ingredients of the recipe.
Cocoa powder- Use unsweetened cocoa powder.
Baking powder- It will make cookies light and produce slightly fine texture in cookies.
Vanilla essence- It’s totally optional.
HOW TO MAKE COFFEE BEAN COOKIES
In a bowl, mix the coffee powder and hot water. Mix well and keep aside. Use hot water.
Now in a large mixing bowl beat butter and powdered sugar until fluffy and creamy. At this stage add in flour, cocoa powder, corn flour and baking powder and mix.
Lastly add in coffee mixture, vanilla essence and work with your hand to form a soft dough. The dough should be soft. Cover the dough and let it rest in the refrigerator for about 20 minutes.
Once the dough is chilled, divided the dough into equal pieces and start shaping them. Take a one small piece at a time and then roll between your palms into an oval shape. Make cut in the middle of each cookies with butter knife or skewer and place them on a baking tray lined with parchment paper.
Bake in a preheated oven at 180 °C for 12-15 minutes. Do not over bake the cookies. Once baked, let the cookies rest for 15 minutes. Enjoy these cookies with a cup of coffee or milk.
HOW TO INFUSE COFFEE AROMA
In this recipe, you can use any good quality of instant coffee powder you like. I used Nescafe coffee powder to get strong coffee flavor in my cookies. To get rich coffee flavor in cookies the coffee powder has to be mixed in hot water. This step is highly important to give nice aroma of coffee to your cookies.
COFFEE BEAN COOKIES VARIATION
If you like to give little kick to your cookies, then you can add chocolate chunks to it or else, can be submerged them in chocolate ganache after baking. As we all know, Chocolate and coffee always have a deadly combination.

NOTES
- Before baking chill the dough, it helps to harden the fats and also prevent the cookies from spreading.
- You can add more or less coffee powder as per your taste.
- Store the cookies at room temperature in a container.
- Top these cookies with chocolate chip for little kick.
- For more serving, the recipe can be scaled up.
