Whatever dessert I bake at home, my daughter and me both finish it off. We both love chocolate so much. For me it gives immense pleasure to bake something of her choice. As you all know kids these days really don’t eat healthy food. So making my daughter to eat healthy food is huge task for me. To feed my daughter home cooked food is very important rather than outside meal. These fudgy brownie are one of her favorite dessert.

WHAT MAKE BROWNIES FUDGY
Fudgy brownies have a higher fat as compared to cakey. In brownie the fat ratio is high as compared to flour ratio. Fudgy brownie have more wet ingredients, i.e butter and chocolate than dry ingredients. More wet ingredients result in fudgy brownie. A cakey batch has more flour as compared to fudgy and relies on baking powder for leavening.
INGREDIENTS
Chocolate- I have used dark chocolate. Milk chocolate, semisweet chocolate all work.
Butter- Butter add flavor and texture to the brownie. Makes the chocolate flavor richer compared to oil.
Vanilla extract- Use good quality of vanilla to add rich flavor.
Curd- I have used curd in this recipe. You can also use hung curd.
Granulated sugar- Don’t use regular sugar use granulated sugar.
All purpose flour- Basic all-purpose flour for this brownie.
Cocoa powder- To add extra chocolaty flavor.
Baking powder- Helps to lift the brownie.
HOW TO MAKE CHOCOLATE FUDGE BROWNIE
Let’s start by melting the chocolate and butter together in the microwave. Chop the chocolate, add in the medium size bowl along with the butter and melt in the microwave for 30 second in 2 or 3 intervals and stir well. Once the chocolate is completely melted, set aside.
In a large mixing bowl whisk together curd, granulated sugar and vanilla extract. Pour in the melted chocolate and whisk again until combined well.
Next, Sift dry ingredients, i.e all purpose flour and cocoa powder. Add the flour, cocoa powder and baking powder to the chocolate mixture and mix well. Do not over mix the batter.
Prepare the 8-inch baking pan, lined with parchment paper. Pour the batter into the prepared baking pan.
Bake for about 40-45 minutes at 180°C or until a toothpick inserted into the centre comes out clean. Let the brownies cool completely before cutting or chill in the fridge for atleast an hour to let the brownie firmed.

Notes
- To make brownie batter thick use hung curd instead of curd.
- You can decorate these fudgy brownie with chocolate ganache, caramel sauce or scoop of vanilla ice cream.
- To give more flavor you can add chopped nuts of your choice.
- Store the chocolate fudge brownie in an air tight container for up to 3 days in the refrigerator.
